- You will need
- 1 Spaghetti Squash
- 1 Jar of pasta sauce
- Olive oil
- Salt & Pepper
- Italian herb seasoning
- Red pepper flakes
- Fresh chopped garlic or garlic powder
- Fresh parsley or basil
- (optional)
- Red & yellow bell peppers (optional)
- Mozzarella & Parmesan Cheese
Preheat oven to 375. Wash off squash, carefully cut it in half, scoop out the seeds, drizzle it on the outside & inside with olive oil. (I use a brush) put a bit of salt and pepper on it, in the inside and Italian herb seasoning. Then roast it on a baking sheet face down with parchment or foil for 40 to 45 minutes until you can stick a fork in it. Let it cool to the touch and scrape out the inside with a fork into a bowl. Be gentle on the skin and don't throw it out set it to the side. Stir in, to taste salt, pepper, herb seasoning, red pepper flakes, fresh herbs, garlic powder or minced sauteed garlic or even raw, and if you like peppers you could cut red & yellow bell peppers and saute them, to add to this dish while the Squash is roasting. after you gently stir in your flavor options, stir in about a handful of mozzarella and sprinkle in some parmesan until it melts. Now this where the skins come back in. Cover the bottom lightly with a little pasta sauce then spoon some of the spaghetti squash back in add more sauce then another layer until its full. Top with sauce & mozzarella then stick back on a baking sheet and put it in the oven on broil until the cheese is bubbly and melted. Let it cool for a few minutes & enjoy.
